Do you mean something like this:

CREATE OR REPLACE FUNCTION "public"."test"()
RETURNS timestamp  AS
$BODY$
DECLARE
mydate_var timestamp;

BEGIN
--store the current timestamp  in a variable
mydate_var = now();

RETURN mydate_var;


END;
$BODY$
LANGUAGE 'plpgsql' VOLATILE;
