Use:

DECLARE
  cursorname refcursor;
  varname int;
BEGIN
  OPEN cursorname FOR EXECUTE ''SELECT ... FROM '' || $1 || ...;
  FETCH cursorname INTO varname;
  CLOSE cursorname;
  RETURN varname;
END;
