Try replacing the rowtype with SETOF doof:

CREATE OR REPLACE FUNCTION test(INTEGER)
    RETURNS SETOF doof AS '
SELECT * FROM doof WHERE pk_id=$1;
 ' LANGUAGE SQL STABLE RETURNS NULL ON NULL INPUT;
